choc chip slice

This is a great slice to whip up if you've got hoards of kids coming over for a school holiday play date.  Or maybe that's just me.  Anyho, it's easy to make, kids love it and it's even got oats in it, so it's borderline almost kind of healthy.  Here's what you'll need to make yours at home:


1/2 cup self raising flour
1/2 cup plain flour
1 cup rolled oats
2/3 cup brown sugar
1/2 cup choc chips
1 egg,  lightly whisked if you can be bothered
125g butter, melted

Now before we launch into the whole 'this is how you make it' thing, I should point out that a) I'm quite a lazy baker and b) I have a fancy pants kitchen aid.  
This means two things...
1) I never sift a thing.  Except when I'm making a sponge cake, cos those suckers need air and plenty of it.  
2) I just chuck everything into the kitchen aid bowl and flick it on.  None of this one bowl for dry ingredients, another for wet ingredients.  I'm all about getting in and getting out of the kitchen as quick as possible.  But if you're a traditionalist, then go right head and sift & separate.  This is totes a judgment free zone.

Right, so here's how you make it...
Preheat your oven to around 180 deg C.  Grease and line a slab pan.  I usually spray the pan with spray oil and then line the bottom with baking paper.
Tip all the dry ingredients into your bowl...




Throw in your egg and then measure & melt your butter.  I don't have kitchen scales, but I've worked out that 1 tablespoon of butter equals 25grams.  So you'll need 5 tablespoons of butter for this recipe.






Mix that up and then add in your choc chips.  I used white choc chips cos it's what I had in the pantry, but it's just as yummy with dark or milk choc chips.


Pour into your prepared pan, smoothing the top as you go....



Bake for around 20 minutes or until the mixture is golden brown and firm to touch.  Remove from the oven and set aside to cool completely.  Cut into squares and serve with a glass of milk.

    I don't do fiddly recipes unless I know it's going to be taste-bud-blowingly worth it!
