lunchbox ideas: savoury muffins

So here we go with another lunchbox friendly recipe.  This one's got zucchini in it, but if you finely grate it and smother the tops of the muffins with cheese your kids will never know.  Promise.


Now when I make these, I offer a warm one to the kids, which they usually inhale, then I wait for the rest to cool down before wrapping them and putting them in the feezer for the following week's lunches.  It saves so much time in the mornings and is a great alternative to sandwiches.  Hope you and yours like them too x

  1. Ah, wishful thinking. I used to get away with grated zucchini in chocolate cakes but my daughter can spot a sliver of grated green zucchini at 50 paces. things have to be pureed for me to get away with it, little bugger she is.

    1. It's the same around here too, although for some reason the zucchini in these muffins went unnoticed? Maybe it was the 3,000 kilos of cheese I whacked on the top?!?!
