banana choc chip muffins


INGREDIENTS:
Makes 12
125g butter, softened
1/2 cup caster sugar
2 eggs
1 tsp vanilla essence
2 cups self-raising flour
2 tablespoons cocoa
2 ripe bananas, mashed
3/4 cup milk
1 cup chocolate chips

METHOD:
Preheat oven to 180 deg C.  
Beat butter and sugar in a bowl until creamy.
Add eggs one at a time, beating well after each one.  Add vanilla.
Fold in combined sifted flour and cocoa.
Add the milk and mashed bananas.
Stir until just mixed then add the chocolate.
Spoon into muffin liners until 2/3 full.
Bake for 15 minutes and allow to cool before serving with a glass of milk.
