So here's the thing. Not only is Scott hardcore addicted to mars bars & mexican, he's also what can also be described as a Coca Cola Addict. Which is something I don't support at all, so you can imagine his surprise when I whipped up this delicious looking Coca Cola Cake for his 40th birthday.
Now before you all think, "Eeewww, a cake made out of coke" I have to say that it really was one of the most delicious cakes I've ever eaten. And if nothing else, I know my cakes. The coke is just a sugar substitute that somehow manages to caramalise the outside of the cake, which tastes pretty good and it's definitely one I'll be making again.
ingredients:
250g butter
250g self raising flour
300g sugar
1/4 tsp baking soda
3 tablespoons cocoa
200ml coca cola
75 ml milk
2 eggs
method:
Preheat the oven to 180 deg C (350 deg F)
Line the bottom of a round baking tin with baking paper and grease the sides with spray oil.
Beat butter and sugar together until light and creamy.
Add the eggs, one at a time, beating well after each addition.
Add the coke & milk and mix until well incorporated.
Add the flour, baking soda & cocoa & mix until just combined.
Pour batter into baking tin and bake for 40-60* minutes, or until a toothpick comes out clean.
Let cake cool completely before icing.
** the original recipe stated a 40 minute cooking time, however my oven is super slow and the cake required a total of 60 minutes to cook right through.
icing:
60g butter
2 tablespoons coca cola
3 tablespoons cocoa
300 grams icing sugar
Combine all ingredients in a bowl and beat until smooth.
Ice the cake and serve with a side of whipped cream.
Brush you teeth straight after consumption or run the risk of owing your dentist a fairly large sum of money.
