Look, I know you will find this hard to believe, especially if you know me in real life and are aware of what I look like, but I actually have a crazy, healthy diet. Breakfast is overnight oats with chia seeds, spirulina & raspberries. Lunch is a chicken salad and lately that's been dinner as well. If I need a snack in between each meal, I'll grab a piece of fruit or eat a couple of these really tasty power ball thingys.
But thanks to a very nasty case of hypothyroidism (under active thyroid) shifting any excess weight is proving to be a very difficult, if not impossible task. It's hardcore depressing, especially when I have such a healthy lifestyle but everyone's got something to battle in their life and this just happens to my thing. Anyho, enough with the whinging. Here's the recipe I created for these power balls. Which isn't a great name but it's all I could come up with. Anyone else got a better suggestion?
ingredients:
1 cup uncooked rolled oats
1/2 cup mixed nuts
(I use almonds, sunflower seeds, chia seeds, cashews & walnuts...all raw & unsalted)
1 teaspoon raw cocao powder
1 tablespoon goji berries
6-8 dates (seed removed)
method:
Put your oats, nuts, cocao powder & goji berries in a food processor or blender and whiz until it looks like a powder. Add the dates, one at a time, whizzing after each one is added. Remove the mixture from your food processor and place in a bowl. Add a little water (1-2 tablespoons) and using your hands, mould the mixture until a dough forms. Roll into balls and refrigerate. Store in an air tight container in your fridge until they're all gone!
I have Hypothyroidism teamed with Polycystic Ovaries. I hear you big time. I HATE it. I eat very well too but if you looked at me you would jump to the conclusion that I must sit down to the worst foods and drinks. It is so unfair :(
