Stuffed Baked Potato Recipe

So as mentioned on Monday's Meal Plan, tonight's meal was Steak with Baked Stuffed Potato.  Which isn't really stuffed at all, but it totally could be.  If I could be bothered removing the flesh, mixing it with the ingredients and putting it back in the potato skin.  Which I can't.  So I don't.  Anyho, as promised, here's the recipe...

Step One: Scrub clean a potato and wrap it tightly in al-foil.  Throw it in your oven for an hour at 200deg C.  Remove, unwrap, cut in half and put on a plate....


Step Two: Top the spud with spinach leaves...


Step Three:  Pan fry some prosciutto until crispy.  Break into pieces and put on top of the spinach....


Step Four:  Top with my super secret dressing...which may or may not be revealed on the blog tomorrow...


Step Four:  Serve with a side of steak.  Which I don't have a pic of as I actually whipped this spud up at lunchtime because a) the lighting is much better for foodie photos during the day and b) I wanted to test the recipe...but we did have the same meal (with the steak) for dinner and it was delish!  Even the kids ate it.  Well kind of.  Sophie picked at it, but Bailey inhaled it.  As you do when you're 11 and are almost taller than your  mother.   And yep, I totally had a stuffed spud for lunch and dinner today.  Living on the edge people.  I'm living on the edge.
