butterscotch biscuits


These delicious little morsels are really easy to make and go down a treat with the kids and grown ups alike.  Here's what you'll need to make your own batch at home...

250g butter, 1 cup brown sugar, 2 tablespoons golden syrup, 2 teaspoons vanilla essence, 2 1/2 cups self raising flour.

And here's how you make them...

Preheat your oven to 180 degrees.

Cream/beat the butter, sugar, golden syrup & vanilla essence until the mixture is light and fluffy. Add the flour and mix until well combined.

Line a baking tray with baking paper, roll the mixture into balls the size of a walnut, place on the baking tray, press lightly with a fork and bake for 10-15 minutes.  Let the biscuits cool for a good 5 minutes before transferring them to a wire rack to cool completely.

These biscuits also make a lovely gift.


After I'd whipped these up on Sunday afternoon and once they were cooled, I packaged them up in a cellophane bag, tied the cutest little tag around the top and gave them to a friend that afternoon to say thank you for taking Sophie to and from and birthday party for me.
