So the school year is well and truly underway for us here in Australia and I, like many mums and dads out there, often struggle with what to put in my children's lunchboxes each day. I aim for healthy, easy to eat items and every now and again they're both allowed tuckshop. A typical lunchbox for my two goes something like this:
a couple of pieces of fruit
a ham and salad wrap/sandwich
a packet of carbs (rice wheels, potato sticks, vita wheats etc)
a tub of yoghurt
and something baked at home
This week, I thought I'd share with you some of the easy recipes that I bake each week. I usually do my baking in bulk on the weekend and either freeze it or refrigerate it. If I whack it in the freezer, it'll last in there for up to 3 months and if I refrigerate it, it'll keep for about a week. Bearing in mind that I live in Brisbane, which at the moment is really hot. If you live in a cooler climate, you can probably just put your baked goods in the pantry.
So here we go with the first recipe for the week. Ham & Cheese Muffins. They're really easy to make, taste good and my kids love them. Hopefully yours will too :)
