I don't know about you, but lately I've been trying my hardest to eat nothing but clean, fresh food. Don't panic. I'm not turning into an organic eating vegan (not that there's anything wrong with that) but I am slowly becoming what can only be described as a Clean Eater. Although judging by the copious amounts of coffee and champagne I drink on a regular basis, I wouldn't say I've exactly nailed the whole Clean Drinking side of things.
Anyho, here's one of my fave clean eating recipes that I throw together at the beginning of the week and keep in the fridge to add to salads for a bit of extra flavour. When it comes to the ingredients, I don't use exact quantities. I just whack in as much will fit into my teeny tiny food processor thingy and hope it tastes ok at the end. Which it always does. Here's what you'll need to make your own pesto at home...
A handful of the following ingredients: parmesan cheese, rocket leaves, basil, garlic, olive oil, pine nuts & spinach leaves...
Layer the ingredients in your food processor in the following order: spinach, rocket, basil, cheese, pine nuts, garlic, olive oil...
Blend until smooth-ish. How smooth you get the mixture will depend on how good your food processor is. Mine's a $40 cheapy with a fairly crappy motor, so it doesn't do a super smooth mix...
Scoop out of the mixing bowl and serve...
This pesto tastes great with pretty much anything. I love to have it on smoked salmon and it also tastes great with chicken, steak or in a salad.

The kids love it on crackers for afternoon tea while Scott avoids it all costs. He's more of a cheese and onion chip guy, which he washes down with a 600ml coke. I don't know how he stays so fat free either. It really is one of life's great mysteries which gives me the irrits no end. K&Co. over & out xox
Sounds exactly like my husband too, he is like a rake and his diet consists of more chips and sausage rolls than I care to admit. His greatest concern is putting on weight - life can be so unfair!!
